GIANT ICE CREAM SANDWICH

who doesn't love an ice-cream sandwich? Well, I found a great (easy) recipe for one in my Family Fun magazine.
ingredients:
tube of store bought cookie dough (I used Toll House) and a box (how ever much that is) ice-cream

slice the cookie dough in small pieces and then lay them in 2 round cake pans (spray the pans first). Smash them flat until they reach within about 1/2 inch of the edge of the pan. Cook them at 350 for about 14 minutes. You want to overcook them a little so the cookie won't fall apart. Let them cool for about 2 minutes and them dump the cookies on a wire rack. Let them cool all the way. When the pans have cooled line one of them with saran wrap. You need to overlap the saran wrap enough that it will go all the way around the cookie. Criss cross with another piece of saran wrap that also hangs WAY over the edge. Put one cookie in the pan on top of the saran wrap with the bottom of the cookie facing up. Fill the pan with softened ice-cream. Top with the other cookie bottom side facing down. Wrap the saran wrap around the cookie and then refreeze. When you get it out of the freezer you can wrap the cookie with a pretty ribbon and take it to a neighbor or you can just eat it all yourself.

Lauryn and Clara turn 1


I take a lot of grief because I don't do birthday parties for my kids. (only when they turn 5, 8, 12 and 16). So...I decided at least I could make them great birthday cakes. Here is the one I made for Lauryn and Clara. I am quite proud of it.

Back to School

I am going to make blackboard cupcakes for a treat for Cameron on the first day of school. If any of you want to come over and make some for your kids you are more than welcome. Rice Krispies

We love Rice Krispie treats. Last night we made them with choconilla krispies. They were YUMMY. We ate the whole pan. Good thing we only made half a batch. We highly recommend them. (Tiffani)

Sweet and Hot Pork

So here is a simple recipe for pork.

1/4 cup Brown Sugar
2 Tablespoon Soy Sauce.
Mix it together and put over cooked pork chops.
Then sprinkle in some Hot Pepper flakes. Serve over rice.

I usually double or even triple the recipe depending on how much sauce I want or need. Also if you like it sweeter add more brown sugar, it is kind of a taste as you go recipe. It is really good if you like sweet with your meat. I leave the hot pepper out sometimes for the kids.

Recipe Request

I have a lot of pork chops but not very many good recipes and ideas to cook them with.
So i thought i would put out a request for recipes. i don't really like the whole orange marmalade or cinnamon apple thing that so many pork recipes have in them, i like the savory recipes better, and the quicker/easier the better.
On Sunday i was in a hurry to figure out something to have ready when we got home from church and while i am out here in the summers i don't go all out on a lot of groceries so i was limited on what i had but i did come up with this little concoction/recipe. it actually turned out quite well. ( I also have two brothers out here that i feed so thats why i made so much) :)
6 bone-in pork chops
2 cans cream of chicken soup
1 can petite diced tomatoes w/celery, onion, & chilies
about 2/3 C sour cream
Garlic powder
salt and pepper
6 cups rice
I mixed up the soup, tomatoes, sour cream, garlic, s&p and poured it over the mostly frozen chops in a baking/casserole pan. i covered it and baked it at 300 F for the three hours we were at church and when we got home it was PERFECTLY cooked. the meat was so nice and tender and fell off the bones. i served it all over rice.
It really turned out pretty good, i am just kind of in a rut as far as the things i do with chops so if any of you have some suggestions i would welcome them. :)
I know i could look up recipes on line but it is a little more fun and easier to know what to try when you know someone who has liked it before.

Mom's Best Spaghtti Sauce

I grew up with my mom making this homemade spaghetti sauce and it's one of those recipes that has carried on in my cooking. It's simple, but I don't think I've had anything that beats it.
In small dish combine:
3 Tbsp. Cornstarch
1 tsp. Salt
2 tsp. Sugar
2-3 tsp. Italian Seasoning
1/8 tsp. Pepper
Combine in bowl with 3 cans Diced Tomatoes and 1 can Tomato Sauce or Paste (you can substitute just about any kind of canned tomatoes for this part and you don't neccesarily need the sauce or paste)
Brown ground beef (or ground turkey) with 1 diced onion and some garlic and add tomato mixture.
Bring to a boil and simmer for 45 minutes to 1 hour. Sometimes I make it and instead use frozen meatballs adding them after bringing the sauce to a boil. It's great topped with some parmesan cheese and served with salad and garlic bread. Enjoy!

This week's Recipes

Hello All,
Here are some recipes i have done this week that i really like.

Pizza Twists
Dipping Sauce:
1 Tbsp Olive Oil
1 small onion
1/2 green bell pepper
1 tsp. Crushed Red Pepper Flakes
1 15 oz can fire roasted tomatoes
Salt and Pepper
In sauce pan saute diced onion and bell pepper in olive oil until slightly tender, add crushed red pepper flakes, salt and pepper, and tomatoes. bring to boil, reduce heat and let simmer for 10 minutes.
Twists:
1 tube refrigerated pizza dough
pepperoni slices
grated mozzarella cheese
Roll out pizza dough, on half the rectangle layer pepperoni slices and sprinkle with cheese. fold the untopped half of the dough over pepperoni and press at the edges. with pizza cutter cut 1 inch strips, twist and place on greased sheet pan. continue with all the dough and spray the twists with non-stick oil spray then bake at 400 for 10 - 13 minutes or until slightly golden brown.
These are SO good, i Love the sauce! I always try a recipe and then add my own "opinions" to it. with this one i like to add about a cup of bottled pizza sauce to it and i change the amount of Red Pepper flakes according to who i am serving it to and what heat level i want. i have also used red, yellow, and orange bell peppers in place of the Green and its all good, and i usually dice up the whole pepper instead of half. i always make a lot of these pizza twists and sauce because they are always super good fresh as well as rewarmed.
Fettuccine Alfredo:

1 16oz package Fettuccine noodles
1/2 C Butter
2 C Cream or Half and Half
1 C Grated Parmesan or Parmesan Wedge
1 tsp Salt
1/4 tsp Pepper

Melt butter in large skillet, add cream, salt, and pepper and bring to boil. Simmer uncovered to reduce and thicken. Remove from heat and stir in Parmesan cheese and noodles. Can add cooked diced chicken and cooked broccoli as well.

This is So Good too! I pretty much follow the recipe on this one. :)


I also have been loving this variation of Chocolate Chip Cookies

Rocky Mountain Chocolate Chip Cookies

1 C White Sugar
1 C Packed Brown Sugar
1 C Butter or Margarine
2 Eggs
1 tsp. Vanilla
2 C Flour
1 tsp. Baking Soda
1/4 tsp. Salt
1/2 tsp. Baking Powder
2 C Old Fashioned Oats
2 C Rice Crispies
1 12 oz Bag Chocolate Chips

In a large bowl cream together sugars and butter. Add eggs and vanilla and beat well. Sift dry ingredients into separate bowl add to mixture; fold in oats, cereal, and chocolate chips. Drop by Tbsp onto greased baking sheet. Bake at 350 for 10-12 minutes or until very lightly browned.
*makes 6 doz

So for those of you who did not go to the cooking group on fish. You missed out. I have been cooking fish for Dave once a week and he has requested more. This is a recipe I found on my own that was really good. It was also very easy. I won't post anything unless it is really easy.

I am very happy you started this Tiffani! my friend has one that is linked on my blog called Julie's recipe exchange so if any of you want to check that out you can. i've done several of her recipes and have really liked them.
Also i use these two websites for recipe ideas - http://www.allrecipes.com/ and http://www.foodnetwork.com/ i like to search for recipes by typing in one main ingredient and going through the different ideas it pulls up. I don't know if you want me to put those on the side bar or not. Let me know and i'll do it.
